Quinoa Pilaf

1/4 c carrots, diced
1/4 c green onion, diced
1/4 c celery, diced
1/4 cup green pepper, diced
1/4 c red pepper, diced
3 cups quinoa, cooked
1/4 c olive oil
2 cloves garlic, crushed
1 c almonds, sliced (opt)
1/4 tsp oregano
salt & pepper to taste

Put 2 cups water and 1 cup quinoa into a medium sized pan.  Bring to a boil, cover and reduce heat to simmer for 15 minutes or until all water is absorbed.  Saute all vegetables and garlic in oil about 5 minutes.  Add oregano, almonds, cooked quinoa and salt & pepper to taste.
Serves 4-6.
