How to Cook Whole Spelt or Farro

1 cup spelt or farro
2 1/2 cups water

Soak grain in water for several hours.  Drain and add fresh water (2 1/2 cups).  Bring to boil then cover,  reduce heat and simmer for 45-60 minutes. 
Use in soups or salads.  Grilled Vegetable and Farro Salad
Makes 2 cups cooked.
