This is one of my favorite lunches. I used to eat this with cream cheese, but now that I try to eat less dairy I substitute hummus.
Flatbread or Pita Bread
hummus, any flavor
Any vegetables that you have such as onions, peppers, zucchini, spinach, mushrooms,
carrots, tomatoes, etc.
Dice vegetables and saute in frying pan with a little bit of olive oil. Warm bread in frying pan and spread with hummus. Top with veggies and enjoy!
