Jalapeno Quinoa with Shallots

1 Tbs olive oil
1 small shallot or onion, minced
1 clove garlic, minced
2 jalapeno peppers, minced
2 cups quinoa, thoroughly rinsed
2 1/2 cups chicken broth

Saute onion, garlic and peppers in oil until soft.  Add quinoa and chicken broth cook for 15- 20 minutes until soft.

Serves 4.
