Peach Oatmeal Breakfast Bars

2 cups rolled oats
1/4 c chopped dates
2 Tbs chopped almonds
2 Tbs ground flax seeds
1 tsp baking powder
1 tsp cinnamon
1/3 c honey
3/4 c non dairy milk
4 peaches chopped, canned or fresh
1 tsp vanilla
1/4 tsp almond extract

Preheat oven to 375. line an 8x8 pan with parchment paper.

Combine all ingredients, mix well. Spread in pan. Bake for about 35 minutes. For a crunchier top, put under broiler for a minute or two. Watch the parchment paper or it will burn.

Remove from oven and allow to cool for 15 minutes. Cut into squares.
