Spicy Orange Chicken

2 pounds cubed, cooked chicken (or popcorn chicken pieces)

Sauce:

1 1/2 cups water
2 Tbsp. orange juice
1/4 cup lemon juice
1/3 cup rice vinegar
2 1/2 Tbsp. soy sauce
1 Tbsp. orange zest (grated orange peel)
1 cup brown sugar
1/2 tsp. fresh ginger, grated
1/2 tsp. garlic
1/4 tsp. red pepper flakes


Combine all sauce ingredients and bring to a boil. Mix 3 Tbsp. cornstarch with 2 Tbsp. water and add to sauce to thicken it. Toss with cooked chicken and serve with rice. Serves 4-6.
