Veggie Sandwich

My husband and I have decided to eat less meat and one of our favorite meals is a veggie sandwich. It's more of an assembly than a recipe, but here's how we make it.

Avocado
red pepper
tomato
pickled banana peppers
fresh baby spinach
marinated cucumbers
zucchini
olives
toast
mayo or sandwich spread

Of course you can use any veggies you want. I use a sandwich spread from the deli section of our grocery store. It's a sun dried tomato spread that has a nice kick.

Slice all the veggies thinly and layer them on the toast. Can be eaten open faced or with a second slice of toast on top.
