Erin's Chocolate Chip Cookies

1/2 c rolled oats, ground fine

2 1/4 c flour

1 1/2 tsp baking soda

1/2 c butter

1/2 c shortening

3/4 c packed brown sugar

3/4 c sugar

2 tsp vanilla

1/2 tsp lemon juice

2 large eggs

2 c semi sweet chocolate chips

Pulse oats in a food processor until fine. 

In small bowl add oats, flour and baking soda and stir with a whisk.

In a stand mixer bowl add butter, shortening and both of sugars. Cream together.

Add vanilla, lemon juice and eggs and mix again. Add dry ingredients mixing well. 

Add chocolate chips and combine.

Chill for one hour in the fridge.

Scoop dough onto cookie sheet and bake at 350 for 11-12 minutes. 

Cool completely on rack.
