- 1/2 cup creamy peanut butter
- 1/3 cup honey
- 2 tbsp coconut oil
- 1/4 cup ripe mashed banana
- 1 tsp vanilla
- 1 tsp cinnamon
- 1/4 tsp sea salt
- 2 1/4 cups old fashioned rolled oats
- 1/4 cup unsweetened shredded coconut
- 1/4 cup dried cranberries
- Preheat oven to 350°F and line a large baking sheet with parchment paper. Set aside.
Use a 1/4 cup to scoop out the dough and drop onto the parchment paper. Pat the tops down to flatten slightly.
Bake in preheated oven for 10-12 minutes, or until edges are slightly brown and set. Allow to cool on the cookie sheets completely.
