1 medium yellow onion, diced
2-3 TBS olive oil
2 cloves garlic, minced
1/2 lb sausage, reg or hot
1/4 c flour
1 TBS dried basil
2 TBS tomato paste
4 c chicken broth
2 14.5 oz cans petite diced tomatoes
1 tsp salt
1/2 tsp pepper
4 c frozen or fresh cheese tortellini
3 c packed spinach
1/4 c parmesan cheese
1 c heavy cream or half n half
Saute onion in oil over medium heat. Add garlic and sausage and cook until sausage is done.
Add flour, basil and tomato paste.
Add broth, tomatoes, salt and pepper. Stir and bring to a boil. Add tortellini, spinach, parmesan cheese, and warmed cream. (may curdle if cold)
Cook on high for about 10 minutes (3 minutes if tortellini is fresh not frozen), or until cook ed through. Ladle into serving bowls and enjoy.
