2 1/4 cups whole wheat flour
1 1/4 cups sugar
4 ripe bananas, mashed
1/2 cup shortening
2 eggs
2 1/2 tsp baking powder
1 tsp vanilla
1/2 tsp baking soda
1/2 tsp salt
Preheat oven to 350. In large bowl, mix and beat all ingredients until well mixed. Grease 2 3x8 loaf pans. Pour in batter. Bake 45 minutes.
Muffins: Preheat oven to 375. Scoop batter into muffin tin. Bake for 25-30 minutes.
Makes about 20 muffins.
