Blackened Salmon or Tilapia

2 Tbs paprika
1 Tbs Cayenne pepper
1 Tbs onion powder
2 tsp salt
1 tsp ground pepper
1/4 tsp dried thyme
1/4 tsp dried basil
1/4 tsp dried oregano
4 fish fillets, skins and bones removed
olive oil

In a small bowl, mix paprika, cayenne pepper, onion powder salt, pepper, thyme basil and oregano.
Drizzle fish fillets on both sides with olive oil, and sprinkle both sides generously with spice mixture.
Heat 3 Tbs olive oil in large skillet over high heat,and cook fish until blackened, 2 to 5 minutes. Turn fillets, cooking another 2 - 3 minutes until fish flakes easily with a fork.

*Save any remaining spice mixture in container with a lid.
Yummy served over Caesar salad or as Fish Tacos.
