Aunt Wyla's "Apple" Pie

With zucchini season at it's peak, try this great fake out pie!  It's so good nobody will realize it's not apples!  It works especially well with those extra large ones you find hidden under a leaf.

6 c zucchini, peeled, seeded, sliced and cooked until tender
It will cook down to about 4-5 cups.

If the zucchini is bigger than 4 inches in diameter, I cut it into quarters lengthwise and scoop the seeds out.  Just in half if it's smaller.   Then peel it and slice it into 1/4 inch slices.  Put in microwaveable bowl with 1 cup of water and cook on high until tender, but not mushy about 7 - 8 minutes, stirring occasionally.  Drain off water.

add:
 2 T lemon juice
dash of salt
1 1/4 c sugar

Mix dry ingredients in small bowl
1 1/2 tsp cinnamon
1 1/2 tsp cream of tartar
dash of nutmeg
3 T flour

Add to fruit mixture.  Filling will be runny.  Pour into pie crust and dot with butter.  Cover with top crust.  Bake at 400 for 40 minutes.
