Pumpkin Cookies

I have experimented with several pumpkin cookie recipes over the years trying to make them better for you.  I think this one is a keeper even with the butter and sugar missing.

3/4 c honey
1/2 c applesauce
1 c pumpkin puree
1 egg
1 tsp vanilla
1 tsp nutmeg
1 tsp cinnamon
1 tsp baking soda
1/2 tsp salt
2 1/2 c whole wheat flour
1/2 c white flour
1 c chocolate chips OR raisins

Mix all wet ingredients together.  In separate bowl, combine dry ingredients and whisk together.  Add dry to wet and mix until blended, but don't over mix.  Stir in chips or raisins or combination of both.
Lightly grease cookie sheet with cooking spray.  Drop by teaspoonfuls on to sheet.  (optional: To make them flatter use the back of a spoon sprayed with cooking spray and flatten each cookie.)
Bake for 12-14 minutes at 350.  Makes about 30 cookies.
