Rox's Easy Truffles

1 1/2 cups good semi sweet or dark chocolate chips
1/2 c. cream
1 tsp vanilla or 1/4 tsp mint extract

Place chocolate in a medium bowl. Heat cream just till boiling (watch carefully).  Pour over chocolate and let sit 5 minutes.  Whisk until smooth, adding extract.  Cool in fridge 2 hours.  Shape into teaspoon sized balls.  Refrigerate over night and roll in desired coating: cocoa, powdered sugar, fine nuts, chocolate coating, sprinkles etc.

Note:  I mixed powdered sugar and cocoa together for the coating so it's not so bitter.
