3 eggs, room temp
1 1/2 c sugar
3/4 c oil
3/4 c cocoa
2 t baking powder
2 t vanilla
2 c flour
powdered sugar for rolling
Beat eggs, sugar, oil, cocoa, baking powder and vanilla until well combined. Gradually stir in flour until just mixed. Cover and chill 1-2 hours. Preheat oven to 375. Shape dough into 1-inch balls. Roll in powdered sugar to coat. Place on an ungreased cookie sheet.
Bake for 8-9 minutes, or till edges are set and middles still look undercooked. Cool on cookie sheet for 2 minutes, then transfer to a wire rack to cool.
Makes about 4 dozen.
