Peach Cake

1 ½ C. Sugar
2 eggs
2 C. flour
1 tsp. cinnamon
¾ C. Oil
1 1/3 C. Mashed Peaches
1 tsp. soda
¼ tsp Salt

Mix all ingredients and bake at 350 degrees for 35 min.

Frosting:
1 C. Sugar
½ C. Butter
2 Egg Yolks
1 tsp. Flour
2/3 C. Evaporated Milk

Bring to boil, stir and boil for 10 minutes. Remove from heat and add 1 tsp. vanilla and ½ c. chopped pecans. Let cool and Frost cake.

Shepherd's Pie

1 lb hamburger (or beef chunks rinsed and drained)
1 can tomato soup
1 can cut green beans, drained
1 T dehydrated onion
1/4 tsp pepper
4-6 servings cooked potato pearls (or any instant potatoes)

Brown hamburger meat and mix with soup, beans, onions and pepper. Place in casserole dish and spread cooked potaotes on top. Sprinkle with grated cheese if desired. Bake covered at 350 degrees for 30 minutes.

Whole Wheat Zucchini Bread

1 2/3 c  brown sugar
1/2 c vegetable oil
1/2 applesauce
3 eggs, beaten
2 c zucchini, grated
2 tsp vanilla
3 c whole wheat flour (can use part white flour)
1 tsp salt
1 tsp baking soda
3 tsp cinnamon
1 1/2 tsp baking powder
1/2 c chopped nuts (opt.)

Mix sugar, oil, eggs, applesauce, zucchini and vanilla in large bowl. Sift together in separate bowl whole wheat flour, salt, soda, cinnamon, and baking powder. Add dry ingredients to first bowl, stirring to combine well. Add chopped nuts. Pour into greased and floured bread pans. Bake at 325 degrees for 60 minutes. Yield: 2 large 9x5 loaves or 3 smaller 8x4 loaves.

Easy French Bread

2 1/2 c very warm water
1 T salt
2 T sugar
2 T yeast
Do not stir until yeast dissolves, then stir to dissolve salt and sugar.
Add: 3 c flour
Mix until smooth then add:
2T oil
3 c flour
Stir until flour is mixed in. Leave spoon in bowl. Set timer for 10 minutes and stir dough again. Repeat the mixing 4 times.
Divide dough in 2 equal part. Roll each part out into 9x12 rectangles. Roll up like a jelly roll on one of the long edges. Seal edges and ends. Place on cookie sheet that has been sprinkled with corn meal, seam down. Let rise about 45 minutes, or until double in bulk. Make slashes in top with sharp knife.
For shiny, rich, golden crust brush with 1 egg and 1 tsp water beaten together before baking.
Bake 25- 30 min. at 400 degrees.

Bread

10 c flour
1/2 c sugar
1/3 c wheat gluten
3 T dough enhancer
4 tsp salt
1/3 c powdered milk
3 rounded T yeast
3 T lecithin
4 c Hot water

Makes 4 loaves. Let rise 25 minutes in pans. Bake in preheated 350 degree oven for 25 minutes.

Dutch Oven Chicken & Stuffing

This is a great complimentary Main Meal to the Cheese Nibbles

5 chicken breasts
2 boxes stuffing
2 1/2 c. mozzarella cheese - shredded
2 cans cream of mushroom soup
3/4-1 c. water

Place chicken in foil lined 14" dutch oven. Sprinkle cheese on top of chicken. Pour soup over top and cook 1 hour at 350. Place 21 coals on top and 11 on the bottom. The last 15 minutes of cooking time, place stuffing on top and drizzle with water and continue to cook until stuffing is moist.
