I like to boil boneless chicken breasts for recipes like my chicken enchiladas or chicken rolls. I used to chop it up by hand, but then I learned a very easy way to shred it. Put the cooked chicken breasts into a mixing bowl and use the paddle mixer of the Kitchenaid on medium high until shredded.
Pork or beef roasts shred easily too for Cafe Rio Salad or French Dip Sandwiches.
