Lemon Pepper Fish

4 fish fillets 
1/4 c flour
1 1/2 tsp lemon pepper
1/4 tsp salt
2 Tbs butter
2 Tbs olive oil

Combine flour, lemon pepper and salt on a plate.  Put 1/2 inch of water in low dish.  Heat frying pan on medium high.  Add oil and butter. Dip fillets in water then into flour mixture.  Fry for 3 minutes each side.
