Blueberry Muffins

If you want to cut out dairy then this is a nice recipe for muffins.

1 c whole wheat flour
1 c oat flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
1/3 c maple syrup, sugar, or honey
1/3 c unsweetened applesauce
2 tsp vanilla
1 c oat, soy or almond milk
1 c blueberries, fresh or frozen

Preheat oven to 400 degrees.
Use blender to grind oatmeal to a fine flour. Mix first six ingredients and whisk to blend. Then add wet ingredients. Carefully fold from center to outside until all are blended.  Do not overstir.
Spoon batter into nonstick muffin pan or regular pan with liners or sprayed with nonstick spray.
Bake for 15 -20 minutes until tops are brown.
Makes 12 muffins.
