Crock Pot Vegetarian Chili

2 15oz cans of kidney or small red beans, drained
1 15 oz can black beans, drained
1 15 oz can pinto beans, drained
1 15oz can diced tomatoes
2 green bell peppers, diced
1 fresh banana pepper, diced*
1 can of corn
1 small onion, diced
2 cloves garlic, minced
2 1/2 cups vegetable stock
1 cup medium red salsa
1 chipotle chili in adobo, diced
1 tsp cumin
1 tsp cayenne pepper
1/2 cup of uncooked quinoa
salt and pepper to taste

Add all ingredients to crock pot and cook on high for 3-4 hours.
*Jalapeno or other pepper would work. Or leave out for less heat.
