Pumpkin Apple Muffins

1 1/2 c whole wheat flour
1 c unbleached flour
1/2 c white sugar
1/2 c brown sugar
1 Tbs pumpkin pie spice
1 tsp baking soda
1/2 tsp salt
2 eggs
1 cup canned pumpkin
1/4 c oil
1/3 c applesauce
2 cups peeled and chopped apples

*optional topping:
3 Tbs butter, softened
1/2 c sugar
1/4 c whole wheat flour
1 tsp cinnamon

Preheat oven to 350 degrees. Grease 24 regular muffins cups.
Combine flour, spice, b. soda, and salt in small bowl and whisk together.
In mixer bowl combine sugar, oil, eggs, pumpkin, and applesauce and beat until smooth.
Add flour mixture and combine. Add chopped apples.

Fill muffin cups 2/3 full and bake 18 to 22 minutes. For large muffins tins or mini loaf pans, bake an extra 10 - 15 minutes until toothpick comes out clean.

*For topping:
mix together and sprinkle over muffins before baking
