Broccoli Soup Instant Pot

1 head fresh broccoli

1/2 TBS olive oil

1/2 c diced onion

1/2 c diced carrot

1 cup chopped potatoes

1/8 tsp salt

1 1/2 tsp garlic

1/4 tsp black pepper

1 TBS nutritional yeast

1 3/4 c vegetable broth

1/2 c plant based milk


Press saute button for 6 minutes, add olive oil. When hot add onion, carrots, potatoes and garlic. Add salt. Saute for 4 minutes until onions are soft. If onions stick to the bottom add a TBS of water.

Add black pepper, and nutritional yeast. Next add broccoli and broth. Stir.

Start instant pot on high pressure for 2 minutes. Quick release and test potatoes for doneness. Cook another minute if needed. 

Add milk and stir. Remove 1 cup of veggies and set aside. Puree remaining soup in blender then add the veggies before serving.

*I halved the original recipe.
